It’s far past time for a tropical getaway, wouldn’t you say? The days are all running together, I have no idea what the date is or the time, the house is a wreck 24/7 from a toddler destroying it on the daily with 2 work-from-home parents, but our garage workouts are on point! The one time of day that I know is always going to be quiet? Lunch time… for little man that means smoothie time. And he is as quiet ad still as he ever is while he’s gulping it down. This pineapple coconut smoothie is no different. Consider it your tropical COVID getaway:)
Frozen fruit and canned goods are all good things to have in your COVID pantry, so this one is super easy. Here is what you need:
- Frozen pineapple
- Frozen spinach (or fresh if you wish)
- Can of coconut milk
- Protein powder
- Lime juice
You can make this smoothie as rich and creamy as you want with the coconut milk. Use the full fat kind for some healthy fats and a richer smoothie, use the lite coconut milk for a lighter version. I used just plain pea protein (unflavored) to let the pineapple and coconut shine, but you could choose a flavor that blends well with these tropical fruits like vanilla, or a berry flavored.
