“Cheese” is a conversation I have a lot with those looking to go plant based. The conversation is usually about missing cheese or fearing the alternatives. Which is why I love to research how to make viable alternatives! Like this super quick vegan ricotta.
And this is vegan ricotta is super quick, hence the name. So easy! With just a few ingredients. You’ll need:
- almonds
- lemon juice
- salt
- water
Yep it’s that simple. And if you get blanched almonds, you don’t even have to soak them, which saves loads of time!
And like any good vegan recipe, there is built in versatility. Feel free to add in herbs or spices like garlic, thyme, basil or oregano, or even tis in some nutritional yeast for a little added funkiness. Add this vegan ricotta to any dish calling for ricotta (like my baked ziti).
