Vegan baked french toast

French toast reminds me of being a kid. I used to help my mom in the kitchen, throwing those soaked pieces of bread on the griddle and sprinkling powdered sugar on top. As I got older, I realized I probably shouldn’t be eating powdered sugar for breakfast, and then the whole lactose intolerance thing was discovered so…. there goes the french toast. Now, I’ve tried some healthy french toast recipes that are pretty tasty but then I thought, there has to be an easier way than waiting for a couple pieces at a time to cook on the stove top. You know, like casserole style. After some research, I did it… my vegan baked french toast.

And, while there is maple syrup involved here, this really is still a healthy take on french toast. The custard is full of healthy goodness with the coconut milk, tofu (added protein y’all!), cinnamon and maple syrup (yes there are trace minerals in maple syrup!), not to mention the gut building probiotics in the sourdough.

I have to say, I’m a sucker for some sourdough. I can eat it any which way, shape or form. If it’s on the table at a restaurant, forget it- I’m eating 6 baskets. So, while you can definitely use a different form of crusty bread in this, I have to say that making this vegan baked french toast with sourdough is perfection.

Here’s what you’ll need for this seriously-indulgent-yet-healthy breakfast.

Now besides the main ingredients, you’ll want to know what else you can add to this stuff. You know: the toppings. Possibilities are endless here, but I’ve got some recommendations, depending on how indulgent you want to make it:

  • Top with berries like raspberries, strawberries or blackberries
  • Mix blueberries in the batter
  • Slice some bananas and throw in with the bread
  • Make a drizzle with powdered sugar and almond milk
  • Drizzle with more maple syrup
  • Pour some Nutella on top (yep I said it)
  • Throw some chocolate chips in the mix

I mean, is your mouth not already watering thinking about this stuff?!! So good. And on a side note, I made this on Christmas morning and was totally 100% husband and baby approved.
