Is it too late for pumpkin season? I feel like I ask that a lot…I really do love me some pumpkin though (have you tried these???)! My inspiration came from the always classic Ina Garten when I ran across a sticky bun recipe on Instagram and a cinnamon roll recipe I saw on ohsheglows.com. And while not vegan or even a little bit healthy, I wanted to make a little spin on it. And not to toot my own horn… but the hubby loved these so much, he asked that I make them 2 weekend in a row. So… TOOT…. TOOT…. These are my Vegan Pumpkin Sticky Buns.
I know the idea of letting dough “rise” can be scary or time consuming to people.. and while it does take a little bit of time, it’s actually SUPER DUPER easy. You mix it all up and then just let it sit! Just let the yeast do its thang. In fact, you can even make these the day before, let them sit in the fridge until you’re ready to cook them the next morning.
I messed around with a couple different versions of this, based on some non-vegan recipes I had seen online. And then I thought, how can I make these sticky buns different than all these I’m looking at. Duh… PUMPKIN. And I know I’m not the first one to come up with pumpkin stick buns, but little did I know this pumpkin would make the BEST. ONES. YET. It changed the texture so much from the others I had made, SO moist, SO fluffy, SO delicious. You can play around with the spices here too. If you’re not a pumpkin spice fan, feel free to leave it out and just use cinnamon or just leave out the spices altogether!
