Vegan sweet potato hash

Everyone needs a savory breakfast every now and then. Something heavy and filling, but still delicious and satisfying. This vegan sweet potato hash is IT! Protein from the black beans, sweet potatoes to fill you up, and veggies and spices to satisfy all the savory tastebuds.

You could easily amp up the flavor or make it even more filling with some vegan sausage or bravest crumbles, but even without the added “meat”, this stuff is super hearty! The combo of the mushrooms, potatoes and beans really sets it off.

No one leaves hungry after this meal! Perfect for breakfast, Sunday brunch, or a weekday dinner.

And how might you change it up, you might ask?

  • Use red potatoes instead of sweet potatoes
  • Try kidney beans instead of black beans
  • Throw in some corn, peas, zucchini or other veggies
  • Spice it up with some cayenne or taco seasoning
  • Top with avocados, vegan sour cream or salsa
